History
Viviane S. Caplan was a professor of Nutrition and Physiology in the School of Nutrition, Consumer and Family Studies/Faculty of Community Services at Ryerson University. She earned B.Sc. and M.Sc. degrees from McGill University, a M.Ed. from the University of Toronto and a RD designation. She began teaching at Ryerson in the 1985/86 academic year and retired in 2013.
