Fonds contains materials relating to all aspects of the Hospitality program at Ryerson. There are materials from the beginning of the program in 1951 and every decade since its inception but the majority of the materials date from 1970s and 1980s. Included are objects, photographs, audio-visual materials, graphic and textual materials.
The fonds has been divided into nine series based on topic, material or purpose. They are:

Ryer's Inn

Ryer's Inn was organized and presented by students in the Hospitality and Tourism Management program. It was modeled after the Cornell University event "Ezra Cornell Hotel". Its purpose was to show members of the Hospitality Industry what Ryerson's program had to offer by showcasing its' students. The event is completely organized and executed by student's in the program, with faculty supervision. It's inaugural night was held February 28, 1981. Series contains information about Ryer's Inn galas held in 1981, 1983, 1984 and 1985.

Event photographs

A file of photographs taken during the Ryer's Inn 1981 Klondike Daze event. Photographs include the valet, dancing girls and band, food tables, entertainers, black jack tables, an aerial shot of the dining area, and one of the students working the event.

File contains 5 colour umatic videotapes highlighting some of the events of the February 26, 1983, Ryer's Inn Gala: "An Evening of Southern Hospitality". Tapes include:

Ryer's Inn 1983 press packages and printed materials

File contains materials related to the 3rd annual Ryer's Inn gala - "An Evening of Southern Hospitality". Included in the file are two press packages - sent to the Ryerson Forum and the Ryerson Rambler. The packages include information about the past two events, photographs from the 1982 event, a letter to the recipient, and a page explaining the event. Also in the file are a programme from the event, a proposed menu, a list of donors, and a survey.

Ryer's Inn 1984 - Murder on the Ryer's Inn Express

The annual Ryer's Inn gala was held March 3, 1984 and was called "Murder on the Ryer's Inn Express". Included in the file are two different press packages that include photographs and information about past Ryer's Inns' , press information, event information, and photographs. Also in the file is a menu from the "trial run" of the evening held January 19, 1984, and a sample invitation and RSVP card.

Visitors, events, and conventions

File contains photographs from the 1973 Hospitality Update student convention; visitor's from Iran and the University of Akron, November 1969; a Tourism seminar held November 30, 1972; HRIA receiving its Chapter Charter from the Hotel Sales Management Association, and a HRIA booth set up at an unidentified event.

Hospitality students

File contains black and white photographs showing students, items, and places in related to Ryerson's Hospitality program. Included are dining room scenes, kitchen scenes, library scenes, and photos of the Howard Kerr Hall quadrangle.

Trinidad & Tobago hotel school

In September of 1972 Ryerson entered into an agreement with the Government of Canada, through the Canadian International Development Agency (C.I.D.A.) to provide technical and related assistance to the Government of Trinidad and Tobago for the establishment of a hotel training school, and the training of the faculty and staff to run it.
Sub-series consists of 49 files relating to the establishment of a hotel training school on one of the islands and contain correspondence, agreements, minutes, reports, financial data, personnel records, clippings, background materials, curriculum documents, and photographs.

Agreements

File contains drafts and copies of the agreements between Ryerson Polytechnical Institute and C.I.D.A. for the provision of technical and related assistance in establishing a hotel training school in Trinidad. Also in the file is a copy of the request report from the Government of Trinidad and Tobago to the Government of Canada.

Annual Reports

File contains 2 reports. One is a form for submitting report to be added to Ryerson's Annual Report for 1972-1973. The second is a more indepth 2 year report on the establishment and running of the Hotel School in Trinidad.

C. I. D. A. - general

Canadian International Development Agency (C. I. D. A.) materials. Included is information related to the Hotel School, and two published items: "No Room for Routine" and "The Future Role of DAC" both by C. I. D. A. president Paul Gerin-Lajoie.

Final Proposal

Chairman's copy of the final proposal regarding technical assistance in the development of a Trinidad and Tobago Hotel School. Report was submitted by George Korey, Dean of the Business Division at Ryerson; and Dr. L. S. White, Chairman of the Hotel, Restaurant and Institutional Administration department at Ryerson.

Official School opening

The Trinidad and Tobago Hotel School opened officially on Monday May 14, 1973. In attendance from Ryerson were Dr. George Korey, Vice President Administration and acting Dean of Business; and Dr. H. H. Yates, Vice President Academic. The file contains newspaper articles, photographs, an explanation about "Capsule Programs" offered by the school, news releases, and other materials related to the Hotel School.

On-site Inspections (Korey)

File contains reports and findings from George Korey's site visits to the Trinidad and Tobago Hotel School between 1972-1974. Also included in the file are his notes and other materials relating to the 28th annual conference on Hotel, Restaurant and Institutional Education - "Dynergy 1973 - A mandate to shape the future". The conference was held in San Diego, California August 5-8, 1973.

Photographs

File contains photographs of the buildings and people associated with the Trinidad and Tobago Hotel School. Included are photographs of the building's exterior, interior photographs of students, staff, kitchen, dining room, hotel rooms, and some that appear to be from the school's grand opening. Also in the file is a copy of "Canada Exchange" magazine, volume 2 number 2 published by the Canadian Bureau for International Education. This edition of the magazine has an article and photographs about Ryerson's involvement in the Trinidad and Tobago Hotel School.

Preliminary proposal

Chairman's copy of the preliminary proposal "A proposal re: Technical Assistance in the Development of a Trinidad and Tobago Hotel School located at Chaguaramas Bay, Trinidad". Report was submitted by Ryerson Polytechnical Institute to the Canadian International Development Agency (C.I.D.A).

Progress reports

File contains correspondence and weekly progress reports to from W. H. Shepherd, director of the Trinidad and Tobago Hotel School, to Dr. L. S. White, Chairman of the Hotel Administration program at Ryerson.

Staff Meetings

File contains a report and accompanying materials for staff training "You and Your Job" held November 21 and 22, 1973. Also in the file are meeting minutes from staff meetings held in 1972.

Trinidad Information

File contains historical, geographical and other information about Trinidad and Tobago. Also included in the file are copies of the Government of Trinidad and Tobago's Civil Service Act, and correspondence regarding a Ryerson student study tour in Trinidad.

Series contains materials related to the courses offered by the School of Hospitality and Tourism Management Included are curriculum related materials, program proposals, promotional literature, and program assessment reports.

Hotel, Restaurant and Institutional Administration degree program presentation

Degree proposal presentation by the Department of Hotel, Restaurant and Institutional Administration to the Academic Standards Committee at Ryerson. Included with the presentation is a letter from Department chair L. S. White to Dr. H. Yates, chairman of the Academic Standards Committee.

Course information

File contains a listing third-sixth semester courses offered during the 1970-1971 school year, and instructions to 2nd year students wanting to study french during the 1977-1978 school year.

Proposal For Curriculum Revision

This file contains Presentation of Proposal for Curriculum Revision Effective Fall 1984, presented to Academic Standards Committee. The presentation was done by the Chairman of the School of Hospitality and Tourism Management William F. Lougheed. Included in the presentation is a copy of Report #55 of the Academic Standards Committee, November 1983 which recommends that the changes be implemented.

Facilities

Series contains materials related to training facilities used by students of the Hospitality and Tourism (HTM) as part of their education. Included is information on the International Dining Room, the Delta Hotels-Sheraton Corporation Hotel Computer lab, and minimal information on HTM's involvement with the International Living Learning Centre. The materials have been arranged by facility.

International Dining Room

The International Dining Room was a facililty for third year hospitality students to demonstrate their management and culinary skills. The room was open September to May and served lunch, from various regions and countries, Wednesdays, Thursdays, and Fridays. At times they served dinners, and morning snacks as well.
The sub-series contains memos, brochures, schedules, reports, and menus.

The Delta Hotel-Sheraton Corporation Hotel Computer Training Laboratory

The Hospitality and Tourism Delta Hotels-Sheraton Corporation Hotel Computer Training Laboratory was officially opened on November 12, 1981. The laboratory's purpose was front of house hotel training furnished with an identical computer system used by medium and large hotel chains. The lab was located in the old business building at 285 Victoria Street.
The sub-series contains newsclippings, press releases, and objects related to the training lab.
