This copy includes a one page typed note written by May Maskow:
Sally Henry led this initiative. (She is shown in the Ryerson Vistas film shot in The Maple Leaf Test Kitchen which she headed. Many if not most of the recipes in the Canadian Cookbook were tested there. Lorraine Swirsky was French Canadian. She tested recipes from French Canada and oversaw the foods/recipe translation of the French edition. Carol Taylor researched recipes and background and assisted in some recipe testing. Before becoming a professor at Ryerson she headed consumer research and writing department of Chatelains Magazine.
While "Food Customs of New Canadians," published in the same decade, focused on the cultural influences of food habits and preparation 'The Canadian Cookbook' was based on foods sourced and prepared in the different regions of Canada. This initiative was created to celebrate the Canadian Centennial in 1967. This cookbook was available in bookstores across the country and at every Lara Secord store in the country. I believe there was more than one printing . October 2017.
